Recipe: Summer & Scapes Cavatelli
March 21st is the first day of spring! In these wild times of living in Ontario in 2021, something to look forward to is the changing of the seasons which brings us a new bounty of fresh produce. As the weather gets warmer and as I begin to prepare a garden, thoughts of last year come flooding back. When I first discovered Bondi Produce’s delivery service, I never looked back and really enjoyed how they highlighted what was new and season. The lead photo comes from a week when there were all these ingredients, and most notably - Ontario garlic scapes ! This dish should be easy to recreate with garlic scapes, garlic, Ontario ramps and whatever other seasonal bounty you come across. The fava beans were also super fresh and worth the shuck for those perfect green pearls. “Summer & Scapes Cavatelli” transports me back to summer and it’s a simple, yummy pasta dish that is packed with veggies and I love having a bowl like this for lunch as my first big meal of the day. Make this, or a version of it today!
Ingredients
Cavatelli from Famiglia Baldassare
Fava Beans
Shallots
Cherry tomatoes
Yellow Zucchini
Lemon
Good olive oil
Salt & pepper
Method
Shuck the fava beans and boil them in salted water along with cavatelli pasta noodles
Sautée sliced yellow zuchinni and slice shallots with generous olive oil
Add cherry tomatoes, scapes and pre-cooked fava beans
Toss it all together and then add in the cooked cavatelli pasta with a cup or so of pasta water
Top each bowl with freshly squeezed juice from half a lemon and salt and pepper to taste.
Garnish with cracked black pepper, and/or a bit of basil is your heart desires!
