Recipe: Goat Cheese & Cherry Tomato Toast

Simple and to the point. I could eat a version of this almost any day of the week. In the summer, the cherry tomatoes of Ontario are in the perfect state. I love bringing in some extra savoury oomph to a creamy goat cheese with the balsamic, olive oil, salt and pepper. The sweet cherry tomatoes and creamy are lovely, but these contrasts make this a snack with bite that feels a little more special.

  1. Toast a slice of sourdough bread.

  2. Spread with goat cheese.

  3. Halve cherry tomatoes and line up on the toast.

  4. Splash with olive oil & balsamic vinegar.

  5. Generously sprinkle with salt and pepper.

  6. Done!
